When I became vegan (2018), I quickly noticed a lack of vegan dining options in Amersfoort. Working at a local Mexican restaurant, I passionately lobbied for a vegan menu. With my manager’s approval, I set out to create it with minimal extra costs which would fit the restaurant’s strategy and target audience. Using ingredients already in-house and collaborating with my chef friend Christiaan, we crafted a diverse vegan menu featuring delicious starters, mains, and desserts.

I took charge of the menu creation and marketing, utilizing various marketing channels and social media. And it was a hit! Vegetarians and vegans flocked to the restaurant to try the new offerings, and even non-vegan guests loved it. To my delight, the success led to the vegan menu being introduced at other Mexican restaurants in the chain in different cities (such as Nijmegen & Breda), all receiving fantastic feedback.

Sadly, the restaurant owners decided to close our location to focus on larger cities. I shared this news with Amersfoort’s vegan community, and during the restaurant’s final days, we were packed every night with people eager to enjoy the vegan menu one last time. Even now, six years later, I still hear from people who fondly remember and miss those vegan dishes.
